November: it’s Novello time, the first wine of the new vintage! But as you get this wine with a characteristic odor, live color and fresh and fruity taste?
The production technique is simple: consists in putting whole bunches of grapes in a hermetic steel tank saturated with carbon dioxide triggering , thus, the alcoholic fermentation . The wine obtained is separated from the skins and continues in the traditional way the bottling stage.
The ideal combination is risotto with pumpkin, chestnuts and dishes made with chestnut flour
